Bishop's Sidecar Cocktail

1¼ oz Cognac
1 oz Rum
½ oz Blue Curaçao
¾ oz Blueberry syrup (below)
½ oz Fresh-squeezed lemon juice
Blueberries for garnish

Combine in a mixing glass: cognac, rum, blue curaçao, blueberry syrup and fresh squeezed lemon juice. Stir with ice until cold and strain into a cocktail glass.

For garnish place three blueberries on a toothpick (as an option, you can dust blueberries with sugar) and balance on side of drink.

Blueberry Syrup

2 Tbs Water
2 Tbs Sugar
¼ cup Fresh blueberries

Muddle blueberries in a bowl. Combine water with sugar in a microwave-safe container and heat on high for 1 minute in a microwave oven. Remove from microwave, stir in muddled blueberries and allow to sit at room temperature for at least one hour for the proper hue to develop. Strain mixture, pressing the blueberries to extract the juice. If not used immediately, the syrup can be stored in a covered container in the refrigerator. Makes enough for 4 cocktails.
